Oats contain a high concentration of starches and beta-glucan which are responsible for their protective and water-holding properties. The presence of plant phenols can also confer an antioxidant and soothing activity in oats. Some of the oat phenols are also strong ultraviolet absorbers, serving as photo-protectants for the skin and hair.
Oat protein can be hydrolyzed into lower molecular weight fractions to increase its solubility. Adding fatty acid condensate moieties, used to enhance foaming, further modifies the protein.
